Raw Courgette Spaghetti with Nutritional Yeast and Cavolo Nero Pesto


For the Cavolo Nero Pesto:

  • 2 cups cavolo nero (also known as Tuscan kale), chopped
  • 1/2 cup Sun & Seed hemp seeds
  • 2 cloves garlic, minced
  • 1/4 cup Sun & Seed hemp oil
  • Juice of 1 lemon
  • Salt and pepper to taste

For the Courgette Spaghetti:

  • 2-3 medium courgettes (zucchinis), spiralized into noodles
  • 2 tablespoons Sun & Seed hemp butter
  • 2 tablespoons nutritional yeast
  • Extra hemp seeds for garnish (optional)


  1. Prepare the Pesto:

    • In a food processor, blend the cavolo nero, hemp seeds, minced garlic, hemp oil, lemon juice, salt, and pepper until it forms a smooth paste. Adjust the seasoning to your taste. Set aside.
  2. Prepare the Courgette Spaghetti:

    • In a large mixing bowl, toss the spiralized courgette with hemp butter until evenly coated.
  3. Assemble:

    • Place the hemp butter-coated courgette spaghetti on a serving plate.
    • Spoon the cavolo nero pesto generously over the spaghetti.
  4. Serve:

    • Sprinkle nutritional yeast over the pesto.
    • Optionally, garnish with additional hemp seeds for added texture and nuttiness.
  5. Enjoy!

    • Toss everything together gently just before serving to coat the courgette evenly with the pesto. Serve immediately for the best taste and texture.
