Pancakes layered with walnut butter & banana

Fluffy vegan pancakes layered with creamy walnut butter, topped with ripe banana slices and melty chocolate pieces. Perfect for those cozy plant-based brunch mornings! 🌱✨

Ingredients:

  • Walnut Butter: 1/2 cup walnut butter, 1 tbsp maple syrup, pinch of sea salt
  • Pancakes: 1 cup flour, 1 tbsp sugar, 1 tsp baking powder, 1/4 tsp salt, 3/4 cup almond or oat milk, 1 tbsp flaxseed meal + 2.5 tbsp water (flax egg), 1 tsp vanilla, 2 tbsp melted coconut oil
  • Topping: 2 bananas (sliced), 1/2 cup vegan chocolate pieces

Instructions:

  1. Mix the walnut butter with maple syrup & salt to taste. ✨
  2. Mix dry pancake ingredients, then combine your flax egg with wet ingredients separately. Pour wet into dry and let the batter stay slightly lumpy.
  3. Cook pancakes in a non-stick pan until golden brown. Stack them up, spreading walnut butter between each layer. 🥞
  4. Top with banana slices & sprinkle with vegan chocolate pieces. Let the warmth of the pancakes melt the chocolate! 😋🍫
