Green Protein Pancakes with Pumpkin Seed Butter, Kale, Kimchi & Avocado

These aren’t your usual breakfast pancakes — they’re a green, protein-packed reinvention of the classic.
Made with Sun & Seed Raw Pumpkin Seed Protein for natural colour and nutrition, and topped with our Raw Pumpkin Seed Butter, this dish brings together plant-based protein, healthy fats, and live fermented flavour for a nourishing, energising meal any time of day.

The subtle nuttiness of pumpkin seed protein pairs beautifully with creamy avocado, tangy kimchi, and earthy kale — a perfect balance of rich, sharp, and fresh.

Ingredients (serves 2)

For the green pancakes:

  • 1 cup oat flour (or spelt flour) - or just blend our Sprouted Oats 
  • 2 tbsp Sun & Seed Raw Pumpkin Seed Protein
  • 1 tsp baking powder
  • ½ tsp sea salt
  • 1 cup plant milk (oat or almond)
  • 1 small handful fresh spinach (for colour)
  • 1 tbsp olive oil (plus more for the pan)

For the topping:

  • 2 tbsp Sun & Seed Raw Pumpkin Seed Butter
  • 1 avocado, sliced
  • ½ cup kale leaves, lightly sautéed or steamed
  • 2 tbsp kimchi
  • Squeeze of fresh lemon juice
  • Extra virgin olive oil, for drizzling
  • Sea salt & black pepper, to taste

 Method

  1. Blend the batter:
    In a blender, combine plant milk, spinach, and olive oil. Blend until smooth and vividly green.
    In a bowl, mix flour, pumpkin seed protein, baking powder, and salt. Pour in the green mixture and stir until just combined — the batter should be thick but pourable.
  2. Cook the pancakes:
    Warm a lightly oiled pan over medium heat. Pour small rounds of batter and cook for about 1–2 minutes per side until golden at the edges and softly set inside. Keep warm while you make the rest.
  3. Prepare the toppings:
    Gently sauté or steam the kale until bright green and tender. Slice the avocado and set aside.
  4. Assemble:
    Stack your green pancakes on a plate, spread with Sun & Seed Pumpkin Seed Butter, and top with kale, avocado slices, and a spoonful of kimchi. Finish with a drizzle of extra virgin olive oil and a squeeze of lemon.
