Crunchy clusters you can make in one tray, with activated almonds and walnuts for extra bite. Keep a jar on the side for breakfasts and snacks.
Ingredients (makes about 6 servings)
- 100g Activated Organic Almonds, roughly chopped
- 100g Activated Organic Walnuts, roughly chopped
- 150g Sprouted and Raw Organic Rolled Naked Oats
- 3 tbsp maple syrup
- 2 tbsp melted coconut oil
- 1 tsp ground cinnamon
- Small pinch of sea salt (the nuts are already lightly salted)
Method
- Heat the oven to 160°C fan and line a large baking tray.
- Mix the nuts, oats and cinnamon in a bowl. Stir in the maple syrup, coconut oil and salt until everything is coated.
- Spread on the tray and press down firmly so it clumps. The more you press, the bigger the clusters.
- Bake for 20 to 25 minutes, turning the tray once halfway, until golden.
- Leave it to cool completely without stirring, then break into clusters.
Serving
Spoon over yoghurt or plant milk, or eat by the handful. Store in an airtight jar for up to 2 weeks.
About the nuts
Activated nuts are soaked in salted water and dried, which makes them softer and milder than raw ones. The almonds are sweet and mellow, and the walnuts are buttery with less bitterness, so they toast beautifully in the oven. See our guide to activated nuts for more.
Contains tree nuts. May contain traces of sesame seeds.
