This recipe makes two servings.
Ingredients:
- 1/4 cup chia seeds
- 1 cup almond milk (unsweetened)
- 2 tablespoons Sun & Seed Almond Butter
- 1 tablespoon maple syrup or honey (adjust to taste)
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh blueberries
- A pinch of salt

In a mixing bowl, combine the chia seeds, almond milk, almond butter, maple syrup (or honey), vanilla extract, and a pinch of salt.

Whisk the mixture thoroughly to make sure the chia seeds are evenly distributed and prevent any clumps from forming.

Cover the bowl and refrigerate it for at least 2 hours or overnight. During this time, the chia seeds will absorb the liquid and create a pudding-like consistency. Be sure to give it a good stir after the first 15 minutes to prevent clumping.

Take two serving glasses or bowls and start by adding a layer of the chia seed pudding to the bottom of each.

Next, add a layer of fresh blueberries on top of the pudding in each glass.
