Chia Seed Pudding with Almond Butter and Blueberries

This recipe makes two servings.

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup almond milk (unsweetened)
  • 2 tablespoons Sun & Seed Almond Butter
  • 1 tablespoon maple syrup or honey (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • A pinch of salt

Instructions:

  1. In a mixing bowl, combine the chia seeds, almond milk, almond butter, maple syrup (or honey), vanilla extract, and a pinch of salt.

  2. Whisk the mixture thoroughly to make sure the chia seeds are evenly distributed and prevent any clumps from forming.

  3. Cover the bowl and refrigerate it for at least 2 hours or overnight. During this time, the chia seeds will absorb the liquid and create a pudding-like consistency. Be sure to give it a good stir after the first 15 minutes to prevent clumping.

  4. Once the chia seed pudding has thickened, it's time to assemble your dessert.

  5. Take two serving glasses or bowls and start by adding a layer of the chia seed pudding to the bottom of each.

  6. Next, add a layer of fresh blueberries on top of the pudding in each glass.

  7. Continue layering with the remaining chia seed pudding and blueberries, alternating until you've used up all the pudding.

  8. Finish off the dessert with a few extra blueberries on top for a pop of color and freshness.

  9. Optionally, you can drizzle a little extra almond butter and honey (or maple syrup) on top for added flavor and garnish.

  10. Serve your Chia Seed Pudding with Sun & Seed Almond Butter and Blueberries immediately, or cover and refrigerate until you're ready to enjoy. It makes for a delightful breakfast or a healthy dessert.
