Thai Cashew Butter Noodles
- 8 oz rice noodles
- 1/4 cup cashew butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1/2 teaspoon grated ginger
- 1 clove garlic, minced
- Vegetables of your choice (bell peppers, carrots, broccoli)
- Chopped cilantro and crushed cashews for garnish
Cook the noodles and stir-fry the vegetables. In a separate bowl, mix the cashew butter, soy sauce, lime juice, honey, ginger, and garlic. Toss the cooked noodles and vegetables with the sauce, and garnish with cilantro and crushed cashews.
