Thai Cashew Butter Noodles

  • 8 oz rice noodles
  • 1/4 cup cashew butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon grated ginger
  • 1 clove garlic, minced
  • Vegetables of your choice (bell peppers, carrots, broccoli)
  • Chopped cilantro and crushed cashews for garnish

Cook the noodles and stir-fry the vegetables. In a separate bowl, mix the cashew butter, soy sauce, lime juice, honey, ginger, and garlic. Toss the cooked noodles and vegetables with the sauce, and garnish with cilantro and crushed cashews.
