Vegan Courgetti Spaghetti Bowl with Tahini Cream


  • Courgetti (zucchini noodles)
  • Tahini
  • Capers
  • Fresh parsley, chopped
  • Roasted red peppers, sliced
  • Olive oil
  • Lemon juice
  • Salt and pepper to taste


  1. Spiralize the courgette to create courgetti. Set aside.

  2. In a small bowl, mix tahini with a squeeze of fresh lemon juice. Add a pinch of salt and pepper. Gradually add water and whisk until you achieve a creamy consistency.

  3. Heat olive oil in a pan over medium heat. Add capers and sauté until they start to crisp up.

  4. Add the courgetti to the pan and toss for 2-3 minutes, just until they are heated through but still have a bit of crunch.

  5. Pour the tahini cream over the courgetti and toss to coat evenly.

  6. Add roasted red peppers to the pan and stir gently until everything is well combined.

  7. Remove from heat and transfer the courgetti mix to serving bowls.

  8. Sprinkle chopped fresh parsley on top for a burst of freshness.
