Cannellini Beans & Sun Dried Tomatoes Hemp Butter Hummus

  • 1 can (15 oz) Organic Cannellini Beans from @mr_organic
  • 1/2 cup sun-dried tomatoes (not in oil), soaked in warm water for 15 minutes and drained
  • 2 tablespoons Hemp Butter from @sun.and.seed
  • 2 tablespoons Extra Virgin Olive Oil from @sun.and.seed
  • 2 cloves garlic, minced
  • 1/4 cup tahini
  • Juice of 1 lemon
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Water (as needed for consistency)
  • Optional garnishes: chopped fresh parsley, a drizzle of extra virgin olive oil, and a sprinkle of hemp seeds

Instructions:

  1. Prepare Ingredients:

    • Drain and rinse the Organic Cannellini Beans thoroughly.
    • Soak the sun-dried tomatoes in warm water for 15 minutes to soften them, then drain and chop them.
  2. Combine Ingredients:

    • In a food processor, combine the Organic Cannellini Beans, soaked and chopped sun-dried tomatoes, Hemp Butter, Extra Virgin Olive Oil, minced garlic, tahini, lemon juice, and ground cumin.
  3. Blend until Smooth:

    • Blend the ingredients until smooth, stopping occasionally to scrape down the sides of the food processor. If the mixture is too thick, add water a tablespoon at a time until you reach your desired consistency.
