Gingerbread Almond Baked Apples

Tender baked apples with a warming, spiced filling made from Nutcessity Organic Gingerbread Almond Nut Butter. A simple vegan and gluten-free pudding for cold evenings.

Ingredients (serves 4)

Method

  1. Heat the oven to 190°C (170°C fan). Core the apples and score a line around the middle of each so the skin does not split.
  2. Stand them in a snug baking dish. Mix the raisins and flaked almonds, and press the mixture into the cores.
  3. Top each apple with a tablespoon of the nut butter, pressing it down gently, then drizzle with maple syrup.
  4. Pour the apple juice into the dish and cover loosely with foil.
  5. Bake for 25 minutes, remove the foil, and bake for 10 to 15 minutes more, until soft when pierced with a knife.
  6. Spoon the juices over and serve warm with coconut yoghurt or custard.

Tips

  • Eating apples work too; they hold their shape and may need 5 to 10 minutes longer.
  • Leftovers reheat well in a low oven.

Choose apples of a similar size so they cook evenly, and trim a thin slice from the base of any that wobble. For a crunchy topping, scatter a few extra flaked almonds over the apples for the final 10 minutes. Cooking apples collapse slightly as they bake, which is exactly what you want here.
