Pineapple Smoothie with Chia Seeds, Cashew Butter, and Turmeric

Ingredients:

For the Pineapple Smoothie:

  • 1 cup frozen pineapple chunks
  • 1 ripe banana
  • 1/2 cup unsweetened almond milk (or your preferred milk)
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon vanilla extract
  • Ice cubes (optional, for extra thickness)
  • A pinch of black pepper (to enhance turmeric absorption)

Toppings:

  • 1 tablespoon chia seeds
  • 2 tablespoons cashew butter
  • Additional pineapple chunks (for garnish, optional)

Instructions:

  1. Prepare the Chia Seeds:

    • In a small bowl, combine the chia seeds with 3 tablespoons of water. Stir well and let the mixture sit for about 15-20 minutes until it thickens into a gel-like consistency. This is your chia pudding.

  2. Prepare the Pineapple Smoothie:

    • In a blender, add the frozen pineapple chunks, ripe banana, almond milk, honey or maple syrup, ground turmeric, vanilla extract, and a pinch of black pepper.
    • If you prefer a thicker smoothie, you can add a handful of ice cubes to the blender as well.
    • Blend until the mixture is smooth and creamy. If the smoothie is too thick, you can add more almond milk to reach your desired consistency. Taste and adjust the sweetness if needed by adding more honey or maple syrup.

  3. Add the Toppings:

    • Spoon the prepared chia seed pudding onto the center of the smoothie.
    • Drizzle the cashew butter over the chia pudding.
  4. Garnish:

    • If desired, you can add a few additional pineapple chunks on top for garnish.
