
A make-ahead pudding that works for breakfast or dessert.
Ingredients (serves 2)
- 4 tbsp chia seeds
- 300ml plant milk
- 2 tbsp Organic Raw Cashew & Vanilla Butter, plus extra to top
- 1 tbsp maple syrup (optional)
- Fresh berries and chopped nuts, to serve
Method
- Whisk the milk, cashew and vanilla butter and maple syrup until smooth.
- Stir in the chia seeds and leave for 5 minutes, then stir again to stop clumps forming.
- Cover and chill for at least 4 hours, or overnight, until thick.
- Spoon into glasses and top with berries, chopped nuts and a drizzle of extra cashew and vanilla butter.
Tip
For a thicker pudding, use 5 tbsp chia seeds. For a lighter one, add a splash more milk before serving.
